Costilla’s de Puerco en Salsa Verde (Pork Ribs in Green Sauce)

(Serves 4)

Ingredients:

  • 1½ cups of water
  • 1 tbsp garlic powder
  • 1 16 oz jar Salsa God - Hot Salsa Verde
  • 2 lb fresh pork rib cut pieces (wash thoroughly)
  • 5 bay leaves
  • Kosher salt and ground black pepper to taste

Instructions:

  1. Place pork ribs on a cutting board. Season generously with salt, pepper, and garlic.
  2. Preheat a large skillet or frying pan on medium heat. Add water, pork meat and bay leaves. Bring to a boil uncovered to evaporate water and until the meat is almost cooked. Brown the meat in the same fat that it released and stir from time to time for approximately 30 minutes or more.
  3. Pour the Hot Salsa Verde salsa and the cooked pork meat into a medium to large sauce pan. Simmer partially covered at low heat until the meat is very soft, about 15-20 minutes.
  4. Serve hot. It can be paired with a side of refried beans, Mexican rice, and tortillas. Enjoy!
